About French American Brasserie Restaurant:
Since the beginning of his restaurant career, Fabrice Vergez's dream was to build a grand brasserie. The opening of the French American Brasserie in downtown Atlanta is the culmination of that journey. Vergez's years of successful restaurant operations makes him uniquely qualified to handle this challenge.
Born in Mont-St.-Martin in Northeastern France and raised in Geneva, Switzerland, Vergez began his career at age 15. His family opened a restaurant in Font Romeu, a ski resort in the Pyrenees. Beginning as a dishwasher, Vergez was promoted to prep cook, bartender and then to manager, familiarizing himself with all aspects of the business. His career in Europe also took him to the French Riviera and Somerset in England.
In 1984, Vergez moved to Florida and worked under the tutelage of Roger Verger, Paul Bocuse and Gaston Le Notre at the French Pavilion of Epcot Center in Orlando. A year later Vergez relocated to New York City where he ultimately ended up with the Le Coze family.
In February of 1986, Fabrice Vergez was hired by Maguy and Gilbert Le Coze to open the world-renowned Le Bernardin in New York City. His understanding of restaurant operations was evident to all who visited Le Bernardin during that time. After opening the restaurant, Fabrice spent more than nine years at the highly-respected Le Bernardin classified by the New York Times as the longest lasting four-star restaurant in New York City. In 1994, the Le Coze siblings approached Vergez about opening another brasserie in Atlanta with their namesake, Brasserie Le Coze.
After 12 years of service as a dedicated general manager of Atlanta's favorite brasserie, Vergez purchased Brasserie Le Coze in 2003. With the expansion of Neiman Marcus at Lenox Mall, Vergez decided to move the restaurant and expand the brasserie concept he had nurtured over the course of his career. The idea of French American Brasserie was born. The concept features French cuisine coupled with modern American steaks and chops. The French American Brasserie is a representation of Vergez' French heritage mixed with his American upbringing.
